Breakfast Asparagus with Parmesan

20130416-222045.jpgI’m a huge fan of asparagus; thinking about giving it a try in my new garden. It’s a great veggie, packed with a lot of crunch and health benefits – B6, vitamin A, fiber, etc. Being officially spring, or so I hear because I’m definitely not seeing it, asparagus season is nearing. Which led me to mixing it up with my eggs…

  • Break off the tough stems of your asparagus, place them in a small oven safe dish
  • Preheat your oven to 350º
  • Dribble a bit of olive oil and pepper over the asparagus
  • Add 2 or more eggs on top
  • Lastly, sprinkle parmesan cheese or grate fresh parmesan slices on top
  • Bake in the oven for 15 minutes or more to your liking
