Crockpot Bourbon “Crack” Chicken

This is yet another, easy crockpot dinner that takes only minutes to whip up.  bourbon chickenOriginally adapted from My Time Passages.  Like its title implies, once you start eating, you won’t stop; it’s truly addicting!  This dish alone makes 2 hefty servings but if you add a side of veggies it could feed a family of 3 or 4.


2 chicken breasts either cut into bite-size pieces or shredded after
2 tablespoons cornstarch
2 tablespoons olive oil
1 garlic clove minced
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup or sriracha sauce if you want to heat it up!
1 tablespoon cider vinegar
1/2 cup water
1/4 cup reduced sodium soy sauce


Mix all of the above ingredients in crockpot and heat on low for 8 hours or high for 4 hours.  Since I was limited on time I threw in the chicken breasts whole and shredded after.  Serve on top of your favorite whole grain and enjoy, how easy!
